Minestrone Soup

Another one of my favourite fall cleansing soups, I chose green beans and brown rice in this version of the classic Minestrone…

A tbsp coconut oil, my preference is the tasteless refined version
4-6 cloves of garlic, minced
1 large red onion, diced
4 stalks of celery, chopped
4 medium carrots, sliced
1 organic, low sodium tomato soup
1 28 oz can diced tomatoes
6 cups of organic vegetable broth
1 cup shredded cabbage
Salt and pepper to taste
Dried basil, oregano, sage, thyme, red pepper flakes to taste
1 cup chopped parsley
1 cup frozen peas
1 bunch swiss chard or kale chopped
2 cans of beans, your choice
2/3 cup brown rice pasta, quinoa or brown rice, cooked separately and added after soup has chilled to avoid over cooking the grains
